Scotcharoos

INGREDIENTS

  • 1 cup light corn syrup
  • 1 cup sugar
  • 1 cup peanut butter
  • 6 cups Kellogg's® Cocoa Krispies® cereal
  • OR
  • or 6 cups Kellogg's® Rice Krispies® cereal
  • 1 package (6 oz., 1 cup) semi-sweet chocolate morsels
  • 1 cup butterscotch chips

DIRECTIONS

1. Place corn syrup and sugar into 3-quart saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove from heat. Stir in peanut butter. Mix well. Add KELLOGG'S RICE KRISPIES cereal. Stir until well coated. Press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Set aside.

2. Melt chocolate and butterscotch chips together in 1-quart saucepan over low heat, stirring constantly. Spread evenly over cereal mixture. Let stand until firm. Cut into 2 x 1-inch bars when cool.

Note: Before measuring the corn syrup, coat your measuring cup with cooking spray--the syrup will pour easily out of the cup.

Evaluation 

             These scotcharoos were very nutty and sugary. Along with being sweet, they did also have a salty side to them too. The sweetness and richness from the chocolate topping, along with a salty taste from the peanut butter base created a balanced final product! The texture of this recipe depended on which part of the bite you were on. At first you got a smooth and silky chocolate topping, moving onto the crunchy and sticky base. All together you received a nice dense bar, but still having an airy texture to add some variety! The appearance of this was brown and shiny. The chocolate topping created a smooth finish, and when you cut into it there was a very textured and rough inside waiting for you to devour it. The smell was... to die for, especially when they were just made. There was a peanut buttery smell that mainly ran the show, but you also got hints of saltiness and warmness. It's a smell that can just fill your soul with happiness, along with a pungently nutty smell.

The method I used to make these was the 1 step mixing method. Basically all I ended up doing was mixing all of the ingredients together to create the base, and again I mixed the chocolate and butterscotch chips together, melted them, and poured that right on top. It was a pretty basic recipe and I believe there was some room for error included with this recipe! I would not change anything the next time I make these. 

All in all, this was a great recipe to have over christmas break! My family ended up bringing these along to all three of our Christmas's. Once again, there is nothing that I would change for this recipe and I know for a fact that I will be making these again in my future.
