Chicken Tomato Casserole - Prep time: 20-25 minutes

4 cups elbow macaroni
1 can Rotel Original diced tomatoes
2-3 cans Campbells Tomato soup
2 cups shredded cooked chicken
1/2 medium diced onion
Salt
Pepper


Boil macaroni in 4 cups water for 10-15 minutes, drain and put into pot
Add tomatoes and tomato soup, stir
Add onions and chicken, stir
Salt and pepper to taste
Onion or garlic salt (optional)


Cook on stove top for 5-10 minutes over medium heat. continue to stir. Serve with vegetable of choice


This recipe is easy to make. The most important thing is to stir and keep heat at medium level so it does not burn.

The texture was soft and flavorful. It smells like spaghetti. The moistness depends on the amount of soup you use in the recipe. Sometimes that will differ depending on your preference.  The flavor can change when adding the salt and pepper or other spices.  Its important to add those to taste.

When you don't have a lot of time to prepare a meal, this is a delicious and quick tomato dish!
