Oatmeal Cookies - Prep time 10 minutes

1 cup all purpose flour
1/2 tsp baking powder
1/2 tsp baking soda

1/4 cup shortening
1/4 cup butter/margarine
1/2  cup granulated sugar
1/3 cup packed brown sugar
1 egg
2 Tblsp milk
1/2 tsp vanilla

1 cup quick cooking rolled oats
1/4 cup chopped walnuts (optional)

Mix shortening and butter together until creamy. Add sugars, egg, milk and vanilla to the shortening and butter mixture and beat until creamy.  Add flour, baking powder and baking soda to beaten mixture.and mix together,  Then add oatmeal and mix well.  Chill dough for 2 hours.

Roll dough into 1 inch balls and bake on ungreased cookie sheet for 8 minutes in 375 degree oven.


These cookies are chewy and filling because of the oatmeal. They have a nice golden color and looked like caramel.  They smell delicious!
