Angel Food Cake by Thoa Nguyen Hour 2

                              Angel Food Cake



Ingredients:
     1 Cup cake flour
       2 Cup sugar
       7 eggs whites at room temperature
       1 1/2 teaspoons cream of tartar
       1/2 teaspoons salt
       1 Cup powdered sugar
       2 teaspoons vanilla extra
       1/2 teaspoon lemons extract
Directions:

  1. Heat oven to 375 degrees
  2. Sift the cake flour and 1C sugar+1C powdered sugar. Set aside.
  3. Beat egg whites, cream of tartar and salt until until it forms peaks.
  4. Add the other cup of sugar slowly, then beat on high until stiff peaks forms.
  5. Beating on low, add flour mixture and lemon extract slowly. Fold in the sides and bottom of mixing bowl. 
  6. Move a knife through batter to remove air pockets. Bake 30-35 minutes. 
  7. Remove cake from oven. Invert pan onto a tin funnel to cool completely.
Preparation Method: 
   The method I used was the egg foam method. This method are generally very low in fat.
often having no extra fat added. except the fat in yolks, if whole eggs are called for. The egg foam method relies on the leavening power of eggs and steam to create the lift necessary to make a delicate angel food cake or genoise. 

     Angle food cakes don't need to be brushed with a syrup because the high proportion of sugars in the batter acts as a tenderizer and as a moistener.
     I want to change a bit in the number ingredients to make it so I changed up the recipe. I used the cold eggs and that's was fine. I had to used hand mixer to mixing up the ingredients. It wasn't really bad. The preparation went well. It's a good thing for me to learn. I saw my teacher was always mixed by hand and the cake she made was delicious. 

Critique:
Appearance: The Angel Food Cake was pure white inside, the outside was little bit like orange-brown. It looked very soft. Many holes in the inside. It was the air bubble.

Taste: The Angel Food Cake tasted sweet. It's like marshmallow. It was had a well mixture of flavor.

Texture: The Angel Food Cake was very soft when I cut it. It was sticky. 

Aroma: The Angel Food Cake smelled sweet, like fresh baked.

Assessment:

    I would make this cake again. My family love it. But because it's really sweet so I'll put in less sugar because my family doesn't like sweet pastries. It was my first making this, not bad that I thought. The air bubble is really important to make this Angle Food Cake. I'll share this recipe and make it with another peoples.
