Cranberry Pecan Sandies

Ingredients:
Cookie-
1 package cranberry quick bread mix
1/2 cup melted butter
1 egg 
2 tablespoons orange juice
3/4 cup chopped pecans
30-36 pecan halves
 Orange Glaze-
 1 cup confectioners sugar
3-4 teaspoons orange juice

Directions:
  1.  Preheat oven to 350
  2. In a large bowl combine bread mix, butter, egg and orange juice
  3. Stir in chopped pecans
  4. Roll into 1 inch balls
  5. Place 2 inches apart on ungreased baking sheet
  6. Flatten with the bottom of a glass coated with nonstick cooking spray
  7. Press a pecan half into center of each cookie
  8. Bake for 12-14 minutes or until lightly browned
  9. Cool for 1 minute before removing to wire racks
  10. In a small bowl whisk galze ingredients
  11. Drizzle over cookies
In this recipe I used the creaming method.  This method made aeration which created tiny seed bubbles into the fat.  It also increased the volume of fat by the sugar cutting tiny holes into the fat which then seal over creating tiny bubbles.

These cookies turned out okay.  The cookie was very dry that it would just crumble away.  It did not have much flavor, but the cranberry's and orange glaze gave it some flavor.  It was very light coloring and the bottom got a little brown.

I would probably make these cookies again.  They were not anything special or spectacular though.  If I made them again I would add more cranberry's and orange glaze so it would have more flavor.  Overall the cranberry pecan sandies cookies were alright.
